How to dry bamboo shoots to ensure quality and nutrition

Fresh bamboo shoots have a high water content. Before drying, they need to be cut, steamed, and pressed. After being placed in the drying room, the drying time and the temperature and humidity in the drying room must be strictly controlled. After the drying operation is completed, they can be cooled, graded, and packaged. The qualified standard of bamboo shoots after drying is bright color, golden yellow, and fragrant. The temperature and humidity changes must be strictly controlled at different stages of drying to ensure the quality of dried bamboo shoots after drying. The drying curve changes are as follows:

Early stage: 1 to 7 hours, drying at 45℃, the temperature rises to (about 2 hours) and starts to dehumidify, keeping the temperature and humidity in the drying room constant, and the relative humidity in the drying room is kept at 70%;

Mid-term 1: 7 to 12 hours, baking at 50℃, drying mode, timed dehumidification (30 minutes per row, 5 minutes stop), the relative humidity of the drying room is maintained at 50%, and the color of the bamboo shoots is kept golden yellow;

Mid-term 2: 12 to 25 hours, baking at 60℃, the relative humidity of the drying room is maintained at 35%, and dehumidification is slowly maintained to maintain a certain degree of dryness;

Late stage: 25 to 34 hours, baking at 65℃, the relative humidity of the drying room is reduced to 15%, until the bamboo shoots are completely dehydrated and dried.
