In the yam slice drying process, excellent yam drying technology is crucial. It is essential to ensure that the slices appear white after drying, and the nutritional value and intrinsic components of the yam itself are not significantly damaged. Lantian Factory has analyzed the actual drying techniques and experiences of dozens of yam customers and summarized the specific process for drying yam slices using a yam dryer. The main steps are as follows:
1. Heating Stage: Evenly arrange the slices on trays and heat them to approximately 40°C for 1-2 hours. Ensure that moisture is removed from the surface to ensure a white appearance.
2. Dehumidification Stage: This stage is crucial for drying the yam slices. The temperature should be maintained between 45-50°C for 3-4 hours. Ensure that the temperature and humidity are not too high. High temperatures and high humidity can easily cause the slices to discolor, so timely dehumidification is essential.
3. Setting Stage: When approximately 70% of the moisture has been lost, heat the slices to 50-55°C. The drying temperature should not exceed 60°C, and the drying time is set to 5-7 hours. The drying process is considered complete only when the moisture content of the yam drops below 13%.
