Drying Process of Intelligent Meat Dryer

The preserved meat is the processed product that made through pickling before drying by using our meat dryer. The preserved meat is antiseptic, which can be storaged for long time.

A lot of customers asked us how to dry the meat by using our dryer. Here we explain the step of the drying.

1. Set the high temperater of meat drying machine up to 65-68 celsius degree, and dry 3-4 hours to let the meat fermentated and ensure the good taste of cured meat.

2. We need to reduce the drying speed at the stage of generating color and shrinking shaped, and set the lower temperature to 50-55 ceisius degree, and moisture should be controled at 45% to processing 4-5 hours.

3. The third stage is the quick drying process. The restriction factor in this stage is temperature, and in order to strength the drying speed, the temperature need to be up to 58-60 degree, and drying time should be set to 10-12 hours, and moisture should be set around 38%. And the final the meat humidity will be about 17%.
