After 5 hours, the relative humidity drops to below 52%, and after 12 hours, the relative humidity is consistently below 40%.

3. Moisture Retention Before Packaging:

After the drying process, the chilies have a very low moisture content, are brittle, and easily break. Therefore, they should be placed indoors for moisture retention to allow them to absorb a certain amount of water and soften before packaging and storage.

4. Packaging and Storage

Maintain dryness and ventilation in the warehouse, as well as stacking height, to prevent moisture retention, mold, and breakage of the dried chilies.
