The drying process:
        1. Remove the peel of macadamia.
        Remove the fibrous peel of macadamia within 24 hours after harvested, to minimize the heating and breathing resistance, and accelerate the drying process. The stripped peel will be usually recycled as organic fertilizer, and the macadamia nut will shell will be sent to the plant for processing.
        2. Drying.
        The drying is the very important process of processing the macadamia nut, and it directly determines the storage time and taste and quality of the final product. The fresh macadamia nut will have 37% moisture, and drying process will need three weeks (20 days) to reduce the moisture to 2-3%. And after drying, the fruit nuts will be shrunk to the interior of the shells, and separated from the inner of shells.
        3. Breaking shell and sorting.
        Break the shells to make the dried macadamia edible easily. And then sort the dried macadamia according to the different quality.
