Drying condition of persimmon:
Dried persimmon is a kind of dried fruit made by the dehumidified fresh persimmon. Normally there are two ways to dry the persimmon. One way is natural drying, and another way is using a dryer to dry. Gongyi Lantian Machanical Plant is special manufacturing the persimmon dryer. And the dried persimmon by our dryer will be in yellow-bright color, sweet taste and high quality.
The drying process of persimmon dryer machine:
1. Increase the temperature and when the temperature get to 40℃, put the fresh persimmon in the drying chamber. Ventilate to hydrofuge once every 2 hours, and ventilate 15-20 minutes every time.
2. About 2 days later, the surface of persimmon is in white color, we can knead the persimmon to bread. Knead the persimmon lightly to avoid make it broken.
3. Then set the chamber temperature to 40-50℃, and keep for drying 20 hours, and at the same time do the process of ventilation. At this stage, the temperature can’t over 50℃ which is better for losing puckery.
4. When the surface of persimmon wrinkle, knead the it again. At this time, the persimmon has removed puckery, and the drying temperature of chamber can be up to 50-55℃ and keep drying for 20 hours, and also notice to ventilate. Simultaneously pour plate and turn over the fruit to make heated evenly.
5. Knead the persimmon for third time when the persimmon is dried and has shrinkage. Use our thumb finger and forefinger to knead it from the center. Then the drying temperature of chamber should be lowered to 45℃, and continuous to evaporate. And strengthen ventilating till the hardness of inside and outside of persimmon are basically identical. Pack up the dried persimmon ease back.
Matters need attention:
1. The drying temperature can’t be over 55℃ to avoid the dried persimmon back to puckery.
2. Strengthen ventilating during drying process to avoid mildew.
3. The health demand of export presimmon is higher, total bacterial count should be less than 100pcs/g, and coliform group should be less than 3pcs/g. So we should be strengthen the health management in the drying process by using our persimmon drying machine.
